Tonight I made vegan lasagna and chocolate chip cookies! It was so delicious and filling and now I can’t move.

I roughly used this recipe, but I used more flour (didn’t measure), added soy milk, and didn’t use as much margarine as she says. Also instead of cooking in the microwave I microwaved it for about 90 seconds I think?
It literally melts in your mouth.
Vegan french toast after my 9 mile run this morning :)
I’ve missed french toast and this is the first time I’ve tried a vegan version. It was really good (I was also REALLY hungry), but I had trouble getting the middle to cook all the way.
I just made these pancakes for dessert and they are delicious! They’re made with chickpea flour instead of wheat flour, but I couldn’t taste the difference. I just replaced the egg with 1 tbsp flaxseed with 3 tbsp water.
I love pancakes so so so much I could probably eat them for every meal.
And I love that it only makes one serving, because I would have eaten however many pancakes it made.

I used my juicer for the first time in a while today! I made juice with an apple, broccoli, half a tomato, 3 carrots, some ginger, and a handful of spinach. It was delicious. Then I made muffins with the pulp! I added soy milk instead of orange juice and didn’t add the lime juice. Also rasins, sunflower seeds, flax seeds, and chia! Kind of a weird texture, but good with strawberry jam :)
Smoothie bowl last night :) 1.5 cups frozen berries, a banana, 1 cup soy milk, 2 tbsp hemp seeds, 1 tbsp cocoa powder, handful of spinach
It tastes like dessert but is sooo healthy!
