I’m so proud of myself, I used to be lost without a recipe, but now unless I’m baking recipes just seem to get in my way. Now I’m making my OWN recipes :)
Roasted Vegetables with Quinoa
Chop a medium onion, 2 small zucchini, 2 small yellow squash, and 2-3 tomatoes. Mix veggies with olive oil, salt, and pepper and bake at 450 degrees for about 30 minutes, mixing every 10 minutes.
While veggies are roasting, cook 1 cup quinoa.
Add veggies to quinoa and season with thyme, sage, garlic powder, salt, and pepper.
Eat.
